I hate picky eaters so much.
Here’s the thing about stews; they’re pottages, and as such just about any grain or vegetable you have in the cupboard is totally acceptable.
There is no right or wrong, within reason.
If the end product is safe to eat, nutritious and tastes good, you’ve won.
The pic looks good, I’d lash into a bowl of it on a cold day!
Made a vegan Irish stew for a friend a while back with lentils and it turned out great. Most of the flavour in Irish stew comes from the herbs/spices anyway since traditionally the type of meat you put into stew were the cheaper cuts anyway.
Looks so nice !!! Everyone makes stew different so there isn’t a right or wrong way ! I’d love some now

You can get a packet of ‘soup mix’ in most supermarkets for a couple of euros, it contains a mixture of red and yellow lentils, barley, chickpeas, split peas and a couple of other pulses and is great to throw a handful into stews, soups, casseroles etc.
We started using lentils because one eejit in the house developed a gluten intolerance so we had to nix the barley. Not as good but bulks it up decently

It is now a lamb lentil stew.
I have a stomach bug and even so, that looks amazing. Will you drop a bowl around maybe tomorrow evening or Saturday lunchtime please.
I never had lentils. Sometimes had Barley which I am not a massive fan tbh.
