I have a gigakombi package with internet and two phones. I was explained that I had 50gb of data every month, and my partner had 19gb.
I don’t understand why I don’t use those data and instead I use only the flat rate. Could someone explain this to me?

What about calling your provider instead of ask us?
Flat is probably the primary data available for your number specifically.
The 50GB is the data you have available as part of your GigaKombi, the 19 is the data allocated for the second number.
Do you also not get a monthly bill with the breakdown (usually in a pdf format somewhere on the website or app)?.
It might be more helpful to post that (with personal information blacked out ofc) because this is hard to parse to be honest
