Beuschel with dumplings, Austria (see comments for more info)

  1. Beuschel is a type of ragout. Its main ingredients are the tongue and lungs of a cow which is why it’s probably not for everyone.

    I would definitely call it a traditional dish of Austrian cuisine but in the last decades it has gone a little out of fashion. I assume some people find the ingredients kinda gross.

    While I don’t really like watching when it’s being prepared I love a good Beuschel like my grandma used to make.

  2. I think I’d eat it. I may have to close my eyes. But I would probably eat it as I do like offal.
