* Add in an oven tray the juice of 1 lemon, some extra virgin olive oil and 2 spoons of honey, add salt and stir the mix.
* Insert the chicken in the oven tray and make sure you get “sauce” on all it’s surface. Add some salt on top of it.
* Insert the tray in the oven and cook for 30 minutes at 180ºC
* Flip the chicken and let it cook for another 25-30 minutes at 180ºC
Potatoes:
* Peel and cut potatoes, leave them in water for 15 minutes, then dry them.
* Cut onion in slices
* Fry the potatoes along the onion for 15 minutes in a deep fryer
Aji sauce:
* I used 4 ají limo and 1 ají amarillo, you cut them first and remove the seeds from the inside.
* Boil the 5 ajís for 10 minutes and remove the water (this removes some of the itch, successive boilings would tame them)
* Cut 1/2 spring onion in small dices
* Add the ajís, the spring onion, garlic powder, chopped parsley, salt, olive oil and 1/2 cup of water into a hand blender, and blend everything until it’s a sauce. Note: if it’s too hot, add more oil/water or parsley.
