The trick is not to look at them. Also ignore them when they need money.
Technically they are by definition Europeans. So if they had green skin people without green skin wouldn’t look European. If you are in Asia or Africa maybe you can look European. If you are in Europe you are what a European look like

I haven’t met many Greeks in person but I assume it is like in Italy, in the sense that there really isn’t one single “look”
Some look paler some look darker, we don’t really think about it here. First time somebody said I didn’t look “Italian” was in America and I thought it was super weird because I don’t really stand out in my region for being particularly fair, there are plenty of people with blonde hair and blue eyes and there are plenty of people who are pretty tan.
I don’t think we even notice this stuff here
If we copyrighted all “Euro” related terms and charged dumb people like him 50€ every time they used them he would understand why… + We would’ve solved our economic problems.

So funny that those savages that are first to scream racism, are also the only ones that are so sensitive to slightly darker hair and skin tones that they’d look at the most original Europeans imaginable and question their Europeanness. While normal people would often not notice many actual non-Europeans when interacting with them.
