Dirty is more seasoning related; a dirty martini has brine, dirty fries/chips have BBQ Rub/Peri seasoning/Old Bay/etc.
Loaded is with has a different foodstuff in it; loaded chips or fries have chili, etc. a loaded jacket potato has similar, etc.
just fyi espresso martini is not martini and espresso
I’d definitely consider a gravy topped coffee to be dirty if they helps
