What is the name of this food? I had it in Austria a while back and can’t remember the name

  1. The “croutons” are called “Backerbsen”, the green stuff is chives aka. “Schnittlauch” and the soup likely is beef broth aka. “Rindsuppe”.

  2. *Backerbsen* are sometimes called *egg puffs* or *soup pearls* in English.

    To make your own (if you don’t want to /can’t buy them)

    Ingredients (multiply if you want more)

    * 1 egg

    * 50g wheat flour

    * 30ml milk

    * vegetable oil for a deep fryer

    * salt

    Preparation

    * Mix the egg(s) with the flour, milk, and salt

    * heat up your fryer to 180°C

    * drop small droplets of the dough into the hot oil (be careful not to hurt yourself)

    * fry for 5-7 minutes, stir if needed

    * remove *Backerbsen* from the fryer

    * let your *Backerbsen* dry for a few hours (they should be good for days or even weeks)

    *Backerbsen* are best served in a beef broth with chives.
