Probably they’re less of a castle in the military sense and more of a royal residence now that I think about it. I honestly find Italian military structures lacking when compared to the grandiosity of a seat of power.
They advertise themselves as “Neuschwanstein of central Germany”, which might stretch it a little, but it’s still a very nice piece of historical architecture.
It has late medieval, baroque and neo-gothic influences as they keep adding and changing things (and it mostly burned down once).
Build 1246-1840, first a defense installation, then a residence of the local count.
Castle of Xàtiva or Castle of Sagunto, both are good.

The closest castle to me is Burg Kreuzenstein, which is kind of a half folly in that it was destroyed by the Swedes in 1645, but rebuilt from 1874. The location in the water is super pretty, and it’s the real deal as far as “castles holding the line at the edge of civilization” kind of places go.
Im from Scotland so its a hard pick between stirling and edinburgh castle, both have amazing history and look really nice.
