Carpincho is a synonym I’ve never heard in my life. I just went and searched what RAE says, and like always we call things in various ways: “carpincho, capiguara, chigüire, capincho.” . Who calls them chigüire or capincho? CAPIBARA!

The Wasserschwein (water pig) is larger than the Meerschwein (sea pig aka Guinea pig) but the name implies that they are similar.

I have never heard anybody call it Wasserschwein. People usually call it Capybara.
