


Admittedly it won't set very well but I used:
600g soft cheese, Tesco's Creamfields one.
200ml of double cream, whipped.
Folded in some melted white chocolate.
Biscuit base, added a bit too much butter and didn't bake it long enough so it's not crunchy, it's soft. Made from "Oaties" (working class HobNobs).
Then I blended blueberry's and reduced down with honey and a little water, added some on top.
I haven't actually eaten it yet, I just know I'm so proud of it I shed a little tear of joy that I did some dessert making and it didn't go too wrong!

I made my first cheesecake aged 40. I love cooking savoury stuff but never really took much interest in baking and making cakes and desserts in general.
Anyway, it tasted bloody fantastic but I was shocked just how much sugar and cream and butter that goes in to them!
