    Because it is seen as more expensive in the winter, just like all greens.

  2. Vertical hydroponics farms are something that greatly interests me. They are (IMO) along with lab grown meat, the two most exciting and hopeful technologies for future sustainability.

    I like to imagine huge skyscrapers which are all dedicated to growing crops, with vats that grow meat throughout.

    The food would have to be indistinguishable from that which we eat now though. But if they got to that stage it would be amazing.

    Combining it with a system of mirrors as well which not only reflects the sunlight around the entire structure for the plants, but also powers the building through solar energy, and you have a zero emissions agricultural sector.

    You can then free up a shit load of land currently used for farming and let it rewild, which also helps fight climate change and habitat destruction.
