Peas in tomato sauce (mpizélia kokkinistá) with a little spearmint tzatzíki

  1. For the peas:

    – Salt and sauté red onion, red pepper and (last minute) garlic in neutral oil

    – Add 1 tbsp. tomato paste, mix and let caramelize

    – Add 300g. peas, one medium carrot diced, five Roma tomatoes diced, half a cup of water, two bay leaves, pinch of sumac, pinch of coriander powder, 1 tsp. sugar, 1 tbsp. thyme and some lemon pepper

    – Bring to a boil, simmer until sauce is at desired consistency

    – (Optional) I topped it with spearmint gremolata because I happened to have fresh spearmint at hand, plus some thinly sliced red onion

    For the spearmint tzatzíki:

    – Do a standard tzatzíki and replace dill with spearmint. Use plenty of garlic.
