Sweet chilli glazed sticky ribs homemade

  1. For the ribs
    1 rack pork spare ribs

    1/2 tsp black peppercorns
    2 bay leaves
    1/2 onion, roughly chopped
    1 carrot, cut into chunks

    For the sauce
    80g tomato ketchup
    75g chipotle chilli ketchup (or sweet chilli sauce)
    50ml dark soy sauce
    80g dark muscovado sugar (a must)
    2 tbsp teriyaki sauce
    2 tsp pepper, paprika and cayenne pepper.

    boil the ribs in the carrot, onion, bay leave broth as this will make the ribs really tender and off the bone

    Meanwhile, preheat the oven to 200C/400F/Gas 6
    Bake in the oven for 20-30 minutes, basting with more of the sauce after 10 minutes.
