I’m an Aussie and came back from Germany with an Apfelmus addiction! I put it on everything now lol
Aussie here, my grandparents are German and this is a Christmas tradition for us, we have a big feed with kartoffelpuffer and crappy store bought packet knödel, but you’ve just made me think about how long I have to wait for my next fix haha! Enjoy!

Sour cream master race here:
* 200g Crème fraîce
* 250g Curd Cheese (40% fat)
* Fill it up with Yoghurt (preferably greek cream one) as mutch as you like (about 5 eating spoons)
* 1 Teaspoon of salt
* a little citrus juice
* 25g of choppted chives (I like more)
Stirr it all up and there you go. I like it better, than applesauce.

Apfelmus with a bit of cinnamon.
Or savory, with a bit of sour cream/chives, or salmon+cream cheese.
Also works well as a side, e.g. to something with a mushroom sauce.
I dont understand why people eat these with apple sauce!? It never made sense to me, they are a great herzhafte Beilage and should not be eaten with fruits

Oh these were one of my favorite things that I ate while there. Had them with a white, garlic flavored sauce that I didn’t catch the name of.
Never really liked Kartoffelpuffer, until I was introduced to the Czech version: not sweet, but savoury – with a lot of garlic. So delicious.
Usually I’m too lazy to make them from scratch, so I just use store bought dough and add several cloves of garlic. 😋
Applesauce is reserved for Pfannkuchen/Eierkuchen/Plinsen in my house. And waffles.
Thats shit. You make them so thick they are hardly cooked through. Make thin ones.
