It isn’t. Sorry to my grandmas but Alsatian food lacks vegetables, fruits and refinement. It’s generous and heartwarming especially in the winter but not very elevated in my opinion.
Choucroute is very solid and tarte flambée too.
Alsace is Germany but come on Hans in what universe are you going to convince anyone to eat in a Nordsee instead of a brasserie
