To save the Great Salt Lake, farmers will have to grow less alfalfa. Climate change and the overconsumption of water from the rivers that feed into the Great Salt Lake have left the largest saline lake in the U.S. with 70 percent less water.
To Save the Great Salt Lake, Farmers Will Have to Grow Less Alfalfa

I suspect to save our water in general we are going to have to revert a lot of agriculture to the wise old methods. Some impoverished farmers struggling to grow cash crops for giant seed companies have found relief in multiple ways by reverting to old-style farms that grow 20 things, not 1 or 2. Their land is naturally improving and their yields are better, not to mention the nutritional value of their product.
Happy Veganuary to all who celebrate.
Only pricing changes to the water will change consumption.
