I feel the chocolate in my fridge is judging me!

  3. I’m quite interested in the placement of jars on the bottom shelf – all of the things like capers are on my top shelf at the back where I can barely see them (we have a tall fridge). The bit above the drawer (“salad crisper”) is for cheese

  10. Don’t keep chocolate in the fridge.

    Most chocolate products are designed to be stored and consumed at “room” temperature, with recipes being modified for different climates in different countries around the world to give the best flavour while preventing melting.

    Refrigerating chocolate has two main affects, firstly is that cooling the chocolate causes the different fats to solidify at different rates, seperating them out and causing “blooming” where the milk fats come to the surface of the chocolate. Needless to say this has a negative affect on the overall flavour and texture. Secondly, if the chocolate is consumed while cold then it affects the melt rate and reduces the flavour delivery of the chocolate, which again isn’t giving you the best overall experience of the product.

    The only time chocolate should be refrigerated is temporarily during periods hot weather, to prevent it from melting.
