Let me throw a wrench in your plans. Have you considered a small scale windmill ? It is about 3-5k for 2kW (When solar is around 2k euro for 2kW). But surprisingly a windmill will last you solid 20 years while you would start seeing solar performance decline after just 3 years.
No matter the panel you shouldn’t forget the power bank costs. Total overkill for most, but a tesla power wall is around 10k euro.

We’re doing an 8.73kw ground system with 4.8kw battery (2 x 2.4kw in parallel) installed for 18.500€ from NRG Panel. Just an FYI. We’re in Co Westmeath.
EU are discussing a VAT reduction on solar equipment, might be worth holding on.
