So, initial colonialism was absolutely driven by a hunger for spice. Throughout the Medieval and Renaissance periods, it was fashionable for food in Europe to be bathing in sauces spiced with cardemom, cinnamom, mace, ginger, and nutmeg. As the spice trade became more succesfull, access to spices became more ubiquitous. At some point even the povo’s could afford spices. At that point, the French aristocrats saw fit to introduce their Nouvelle Quisine (19th C-ish), to distinguish their food from that off the plebs. Posts like these are really just a great example of false class consciousness, not so much a demonstration of superiority.
We do use spices but rarely spicy spices. Paprika, zaffron, rosemary, parsely, oregano, pepper, thyme, cayenne peppers etc. The spices we use are to compliment the dish most of the time not to radically change the flavour of the dish
Since when is salt and maybe even a pinch of black pepper not spices?

Terrible take. Different dishes require different amounts of spices. The same meat only needs a little bit of salt in the form of a delicious steak, or a ton of spices if it’s ground to make a chili. Saying spices are bad just because some dishes are better without them is like saying that salmon sucks because you don’t put it in a chocolate cake. Anything can be good in the right context
