  2. We don’t *need* spices but almost every traditional French recipe will use some combinaison of thyme, garlic, rosemary, bay leaf, pepper, etc.

  7. Excuse me? We use salt and pepper! Also garlic! Paprika even if we really go crazy!

    (Not to mention also stuff like bay leaf, juniper, cinnamon, nutmeg, macis, cloves, caraway and all kinds of fresh herbs, but I know, for some chili seems to be the only “spice”)

  8. So, initial colonialism was absolutely driven by a hunger for spice. Throughout the Medieval and Renaissance periods, it was fashionable for food in Europe to be bathing in sauces spiced with cardemom, cinnamom, mace, ginger, and nutmeg. As the spice trade became more succesfull, access to spices became more ubiquitous. At some point even the povo’s could afford spices. At that point, the French aristocrats saw fit to introduce their Nouvelle Quisine (19th C-ish), to distinguish their food from that off the plebs. Posts like these are really just a great example of false class consciousness, not so much a demonstration of superiority.

  9. We do use spices but rarely spicy spices. Paprika, zaffron, rosemary, parsely, oregano, pepper, thyme, cayenne peppers etc. The spices we use are to compliment the dish most of the time not to radically change the flavour of the dish

  14. Terrible take. Different dishes require different amounts of spices. The same meat only needs a little bit of salt in the form of a delicious steak, or a ton of spices if it’s ground to make a chili. Saying spices are bad just because some dishes are better without them is like saying that salmon sucks because you don’t put it in a chocolate cake. Anything can be good in the right context

  16. Why use spices? Potatoes already taste like potatoes. No changes necessary.

  17. Why is everyone hyping up spices? Herbs give off much better flavour

  18. When your meat is rancid the only way to make it palatable is to douse it with shitty spices.

  19. Who needs spices. If I could survive on only fresh baked bread, olive oil, salt and wine I would be the happiest man on earth. Sadly you also need vitamins or something
