
So, i reaaally like our waffles from Brussels that you can get from those mobile waffle makers. Crispy, airy and sweet. I wanted to make them myself, but I remember that a simple waffle maker won't do the job. Then I saw these guys (see picture)
So my question: does anyone know how to use them (do I just put them in the oven until they're hot)? And if they are indeed needed for the Brussels waffle? (And if you know a good recipe, im open for that as well)

You overheat them, then you put it on the back of the cow!
Seriously, no idea on how to use it. I usually use a FriFri and that’s great. Way more easier
pre-heat in oven or fire (turn around so both sides are same temp)
open
insert dough
close
put in oven/fire
wait 1-2 mins (turn around)*
wait about 1 min*
take out and open – waffle should fall out easily with a clean iron
you should use a fitting recipe for this and do not overfill those to avoid a messy clean up afterwards
(if the iron is clean and hot enough it should not stick, you can however use butter spray if you like – apply on hot iron just before inserting dough)

Maybe you can use a gas stove to heat em up?
Cast waffle iron goes in real fire. So not a regular oven.
People who have a waffle stand probably don’t use these and if they have some around their stand, chances are they are for decoration.

I’ve made over 5000 Brussel waffles with these types of irons. I used a gas burner to keep them heated, something like [this](https://belgianwaffleironstore.com/products/reversible-gas-fairground-waffle-maker-2-irons-24-cells). Make sure they’re HOT before you put any dough in. It’s also best to oil them before starting to bake. I wish I could show you because it’s mostly by feeling.

Historian Regula Ysewyn has a large collection of these bad boys. She has a whole chapter in her book about making different kinds of waffles and their historical context; I am quite sure you can find a recipe with specific instructions in there. Your local library will definitely have a copy (Van Wafel tot Koek). All of her recipes are bangers, btw!
