I like them cut like that, they feel less greasy when cooked that way.

If I’m making a sandwich I’m going to cut them anyway to make it stay together better.
If I’m cooking them to eat as sausages, then I always do them in the oven rather than frying which makes them cook more evenly…
It does make them a little worse – seems to dry them out a bit, which is good for sausage sandwiches, I suppose.
But if it’s the only way they’ll eat them, then that’s that.

You’ll lose all the juices and it’ll taste like shit if you do this. Same reason you shouldn’t prick them with a fork before you cook
Surely if they’re all cooked the same, the solution would be to just cut one of them in half at the end. If your partner is still afraid the others aren’t cooked, then I’m afraid they’re a bit paranoid!
Cutting them open to put them in a sandwich or something is valid. But it’s odd that your partner refuses to believe you can cook a sausage without cutting it. How do they cook other meats?

But what about the middle of the two halves?
Cheap sausages, sure no problem but if you got some decent ones you want to keep everything inside for flavour, personally I’d much rather use a food thermometer and have a sacrifice sausage that gets eaten before the main event!
Best way to cook a decent sausage is in the oven. 20 mins on 190 and you’ve got a non greasy, crispy skin and a juicy middle which is definitely cooked.
This dries them out, you’re letting out all that tasty juice.
I’ve done it before with sausages I’m cooking from frozen JUST to make sure, but it definitely makes them less tasty. And I’d only do this for a sandwich. I wouldn’t do this for a plated breakfast.
Could get a thermo probe if they’re that worried, £20 from Argos. My Mrs is the same and she’s happy with it being temped
If you’re reheating sausages for a sausage sandwich (say, post-barbeque) the cutting and frying the middle is top tier.
If it’s purely to visually validate how well they’re cooked in the centre then you have to ask yourself, how are you satisfied that the centre of each half is cooked? Or the centre of quarters?! WHEN DO YOU STOP!!!?

I’d make sure the outside is cooked first.
If the insides of your sausages aren’t cooked properly, you’re cooking them too hot and not for long enough. Low and slow is the way to go.

Meat thermometer, cook at slightly lower temp, keep turning. No problems with middle being undercooked
