I am delighted to be the owner of a block of brown cheese for the next three days. Tried it in an epic Scandic hotel breakfast buffet some years ago and liked it so much now we’re back in Norway have treated ourselves to an entire block. Can’t take it back to London. (Very limited underseat baggage allowance with Norwegian Airlines.)
Planning on having it with the next three breakfasts with brown bread toast and butter and berries. Sadly we’ll have to throw away the remains when we check out of our holiday accommodation on Monday.
If I do manage to track some down in London (I hear rumours Scandi kitchen stocks it) how else to enjoy it besides eating a bit with toast and fruit for breakfast? I see it as a dessert ingredient on restaurant menus here in Bergen and as an ice cream flavour but don’t have the first idea on how to cook with it. Ideas very welcome!

It’s a small block of cheese. How is that going to make the difference between making the underseat-limit or not?
On bread with butter and strawberry jam.
Cheesecake or in reindeer stew
As a filling for pancakes (*crepes*)
Isn’t there an embargo on dairy coming back into the UK currently? Anyway, i wholeheartedly second the idea of waffles, cheese, sour cream and jam. Absolutely one of the best things I ate in Oslo. Really miss it now.
My favorite is toasted bread, a thin layer of honey, and brown cheese. Beats jam every time in my book. Good maple syrup is a nice substitute for honey.
With butter on Digestiv or McVities oatmeal biscuits with milk or tea on the side.

Tine’s export label is Ski Queen. You may be able to find 250 gram cubes in supermarket cheese sections. It may be called “caramel cheese.”
A Norwegian friend thought my enjoying brunost with a little thin-sliced sweet red bell pepper atop a slice of good bread and butter was weird, but it’s very tasty. It’s also yummy grated over a pan of brownies before baking.
I love brown cheese and apple slices. A better, less sweet caramel apple.
