Since opening in 2019, AMARA has brought four popular restaurants to the island. When the property first opened its doors, it quickly made a name for itself with Matsuhisa, a restaurant by famed chef Nobu Matsuhisa, alongside Ristorante Locatelli (a spot from Michelin-starred chef Giorgio Locatelli) and NEREA. Most recently, AMARA opened BeefBar, a beef-focused concept that originated in Monte Carlo and has quickly made a name for itself. With the opening, AMARA aimed to establish itself as a luxury hotel, but also a dining destination, and it succeeded.
“From the outset, our vision was to create a vibrant culinary destination where guests could enjoy a diverse dining experience each night, without ever leaving the hotel grounds,” explains Mr. Luciano Sozzo, COO of Stademos Hotels and acting general manager of AMARA. “We began by curating a portfolio of distinct restaurants, each telling its own story – from refined Mediterranean cuisine to bold Japanese flavors and globally inspired fine dining.”
In order to bring this vision to life, the property partnered with some of the most respected names in the food and beverage industry. “Each restaurant collaborated with its preferred designer to craft a space that is uniquely theirs,” says Sozzo. “For example, the Matsuhisa restaurant was designed by the renowned David Rockwell, who not only designed AMARA but has also partnered with Chef Nobu on several of his restaurants globally. The result is an atmosphere that feels unmistakably Nobu, echoing the essence of his iconic venues around the world, and it even features its own private entrance. ”

Over the past 6 years, AMARA has become a culinary destination in its own right. This is because of the four dining concepts, Matsuhisa, Beefbar, Nerea and Ristorante Locatelli. “Guests staying elsewhere often come to dine at the onsite restaurants and are even prompted to return on the following nights,” says Sozzo. “It’s this framework that incentivizes incredible restaurateurs to become part of AMARA.”

While each restaurant offers a unique dining experience, all have a common thread of providing guests with a memorable experience. Matsuhisa, a concept by Chef Nobu Matsuhisa, serves the most covers of any restaurant onsite each evening. Visitors come for iconic dishes like the black miso cod or rock shrimp tempura, alongside other Japanese-inspired dishes.
Originating from Monte-Carlo, Beefbar was curated by Riccardo Giraudi and Thierry Paludetto. “Beefbar is our newest addition and is centered around premium cuts of beef, ranging from Kobe to American, with a creative, laid-back twist,” says Sozzo. “It’s been well received by guests so far, which led us to open up a special brunch service on Sundays.”
On the other hand, Ristorante Locatelli is headed up by Michelin-starred chef Giorgio Locatelli. The restaurant is known for championing the spirit of Italy, serving up dishes that are designed to be shared. Whereas the property’s fourth dining concept, Nerea, takes a more traditional approach, providing a menu focused on seafood. The beachfront spot has dishes like freshly grilled octopus, crispy fried calamari and the catch of the day.
Elsewhere, all 207 rooms of the resort boast views of the sea. The property has an incredible state-of-the art spa and fitness center, alongside multiple pools and private beach access.
