I’ve said this before on these types of posts. I hate my so called peers (I’m in my early 50s). These people are parasites. And I say this as a one time landlord. They prey on the young less fortunate and I hope they fucking suffer every old age ailment they can get.
I don’t understand the landlord reference thing. What if it’s your first time renting?
I didn’t have to supply this much information for my mortgage application
Most of them are just questions. They’re not asking you to give the stuff now, I think – rather to confirm that you will be able to give them.
Be careful, that reminds me very much of the phrasing in some scammer ad i have encountered around Christmas here. If they suggest some “pay in advance” “i am abroad” “pay through AirBnB” stuff, report and run.

That security deposit is ridiculous. A month’s rent should be more than sufficient.
The working from home question seemed odd until I saw that bills were included, probably fair enough then since bills will probably be higher with such a tenant.
The payslips thing is fair to want so you know they can afford the rent as it’s hard to evict I guess but any landlord that asks for that I avoid. The tenancy and work references should be sufficient without payslips.

Unfortunately that’s what empowers landlords to treat tenants unreasonably.
Ask them how they plan to store and secure your data as a Data Controller.
Give them the bank statement but redact everything.
