We hate flying, wondered if there’s interesting alternatives to the eurostar, to skip London (250km south).

Well, there’s a ferry from Ijmuiden (near Haarlem/Beverwijk) which travels daily from Ijmuiden to Newcastle U/O Tyne. This avoids London.
But yeah, it’s not Norfolk.
There’s a ferry departing each day from IJmuiden, directly west of Amsterdam. But that goes to Newcastle, which is not ideal if you want travel onwards to Norfolk.
You have the stena line to Harwich from Hoek van Holland.
There are only three passenger ferry lines between the Netherlands and the UK. One is the Stena line between Hook of Holland and Harwich (Hoek van Holland is close to Rotterdam and covered by the Rotterdam metro line, so I’m not sure that’s what you meant by “other than Rotterdam”) which is really the only sensible route to get to Norfolk and avoids getting into London. The other two are IJmuiden to Newcastle (North Shields), and Rotterdam Hull so not very practical to get to Norfolk. There are more ferries from Belgium (EDIT: only Hull) and North of France but they all arrive in Kent (Dover mostly), EDIT: and further along the south coast, so you always have to go through London.
There are 3 direct ferries between the UK and the Netherlands:
-Harwich – Hoek van Holland: there are two ferries per day, one day and one night. In Harwich there are trains to London/Norwich/Cambridge. In Hoek there is a metro to Rotterdam with onward train connections.
-Hull – Rotterdam (Europoort). Night ferry, poor public transport on both sides, but shuttle buses are available.
-Newcastle – IJmuiden. Night ferry, in IJmuiden there is a bus to Beverwijk (railway station)

If you have a lorry you can also do Hoek van Holland-Felixtowe (Suffolk), Rotterdam(Vlaardingen)-Felixtowe and Rotterdam(Vlaardingen)-Immingham (Lincolnshire)
There used to be the Norfolk Line from Scheveningen to Norfolk. Not meant for tourists (cargo ship), but a loooong time ago they did allow a few tourists to book a cabin. I don’t know if this is still the case. Iirc it was expensive and there were no luxuries on board, so, apart from the destination, it’s not really recommended. 🤷♀️
