
I made it in the wrong season though because it's still winter here in NZ, but it was really good! I think next time I need to make more potatoes though, they really do elevate it somehow huh

You don’t make “more” potatoes when cooking šaltibarščiai. You make too much, and then eat them with butter and salt later (bonus, if they’re still warm)
As a Lithuanian Šaltibarščiai fan, can say your Šaltibarščiai look good. Sure, there is never too much potatos.

Potatoes for this go so well with pork cracklings. And it is good even in Winter.
If you eat meat, some people add bacon bits and caramelized onions on top of the potatoes.
