We are still making Ukrainian dishes, even while the missiles and drones fly. This is a modern one, not ancient tradition. But we have become adepts. Rolled chicken cutlets with homemade herbed butter including rosemary and sage from the garden. This is served on some salad greens with a very light vinaigrette and some roasted cauliflower.
I love chicken Kyiv. I need to try making it someday too. Слава Україні 🇺🇦

I found out last year that my grandfather’s family came from that area. Is there a particular recipe book anyone can recommend? Possibly one for which the proceeds go towards helping the defensive efforts?
My family never made “Chicken Kyiv,” it was kind of a Russian take on French cutlets, but it was revived in the Soviet era. Personally I don’t consider this Ukrainian cuisine, but I realize I am probably in the minority in this.

It may not be “traditional” in Ukraine, but my family came to Canada from Ukraine in the early 20th century, and I grew up eating this as a family tradition. It is so good! I haven’t made it myself yet… I have to try soon!

I learned how to cook this from my mom.

Oh we in Latvia call it Kievan cutlet (direct translation), if im understanding it correctly. Learned to make them raw (ready for cooking), while at one of my first ever jobs as meat cook in supermarket. Loved these, everyone did. I dont see them much nowadays tho.

Really cool! Could you share a recipe for this? I would love to make it home! And btw how do you feel about Olivier Salad and Shuba? They are part of my family tradition (I’m from Ternopil) along with Holubtsi and Borshc’, so I still make them and will to my kids too

I’m actually writing a story with a Ukrainian character with a sweet tooth. What are some Ukrainian dishes I could write them being a fan of? If you don’t mind me asking. I really want to do the culture justice.
So many steps, but it pays off at the end.
In Poland its called “Kotlet de volaille” and it’s one of our “traditional” dishes though it came from the East.
It’s a must have at Weddings and post funeral Wake.
One of my favourite foods here in the UK, nothing beats a garlicy Kyiv with salad
