  1. Re honestly pitta without ksidates piperies (pickled peppers) is not a proper pitta. Also how are you to eat it without oksinon (lemon), like you might as well not put salt in it.

  2. * Ksidata: personal choice, I mean it’s usually put to the side so it can be discarded
    * Pikla: same as above
    * Lemon: lemon really enchances the flavour of the pitta especially if you put it on the meat and then drips down to it, although I can understand that if you have cyprus quality meat then you might not want to change the flavour because just by itself it tastes so good
    * Tahini: TI STO 8KIAOLO KAMNEIS RE KOUROUPETE?!?!?!?

  3. Its mostly regional though, lemesianoi like ksidata and pikla. Levkosiates like tashi. Also i know that varoshiotes like to put only onion, maitanons and kremidi not salad

  4. Huge cultural shock after moving from Lemesos to butter town. Ordered a pitta and started eating it like a sandwich. Took a bite of a half lemon half onion combo. Indeed lefkosiates are anomaloi.
