Though fish fat is “good” fat.

This chart should be taken with a very LARGE grain of salt. It’s both vague and inaccurate.
It appears that OP got the X and Y axis reversed. Catfish has 7g fat and 18g protein.
Also, an entry for “trout” is vague. Rainbow trout is extremely lean, but brown trout has a fair amount of fat.

We used to eat squirrel sometimes when I was a kid. Not bad meat I guess.
The color coding is pretty unfriendly for those of us who are color challenged.

We don’t eat armadillos around here.. Or beavers and raccoons for that matter.
Damn, this is a cool visualization! Because I am a picky eater and I can narrow in a box of the meat I eat.
And animal rights and social acceptance aside, I’m not interested in Beaver meet, but if it’s further from my square of comfort, I am less likely to like it either. There’s a gamey line. There’s a low fat, low protein meat that I’ve always described as watery in the taste.

I was just reading a book about the Revolutionary War which talked about a British General’s German wife coming over from Europe to Canada to be with him, and discovering that grilled bear meat was delicious. Apparently the paws were her favorite.
Now I see why.
idk what the USDA is smoking on protein content; that’s pretty high for beef, and lol that they didn’t even bother including grass-fed (which has way less fat)

With some of the odd animals on the list I’m surprised they don’t have crickets which I assume is eaten more than say armadillo.
Food animals is a term used loosely here i see.

A lot of those animals aren’t food. Don’t eat an armadillo no matter how high its protein to weight ratio is
Now we just need to crossbreed the goose and the beaver.
