Shane Delia’s Malta explores the island’s layered culinary history through six episodes of travel and taste on SBS Food.

Australia’s own Shane Delia is heading back to his roots with a new series exploring the Mediterranean island nation of Malta, where thousands of years of history are served up on every plate. The acclaimed chef takes viewers across the archipelago’s turquoise harbours, limestone streets and family kitchens in Shane Delia’s Malta, launching Monday 24 November on SBS Food and SBS On Demand.

Through six episodes, Delia traces 9,000 years of Maltese culinary history, uncovering how the island’s food reflects its long and layered past. Over centuries, Phoenician, Roman, Byzantine, Ottoman and British influences have each left their mark, shaping the distinctive dishes still enjoyed today.

From neighbourhood bakeries to Michelin-starred restaurants, Delia meets local chefs who carry forward these traditions. Classic Maltese fare tells stories of resilience and adaptation — pastizz filled with Arabic and Italian flair, a simple pasta dish born from British wartime rations, and sweet Easter fergolli that bring families together.

On his travels, Delia also dives into Malta’s living heritage, meeting locals who embody the island’s creativity and spirit — including a Knight of Malta with tales of faith and endurance.

The series also sees Delia crafting his own Mediterranean-inspired summer menu, blending family recipes with contemporary flair. Expect dishes like braised octopus, Maltese baked potatoes, sfineġ filled with gooey mozzarella, wild cumin nougat and cured tuna — all designed to capture the warmth and heart of the islands.
