Need a bit of Pepper sauce
There’s as grey band around the exterior of the meat. That’s overcooked beef. That’s a big ring of well done steak surrounding a section of medium steak. Not my personal favorite.
A lower temp will give a better sear and less of the grey well done area. Reverse sear also gives a more consistent cook
