    I’m not a fan of meat this rare.

    Season it the fuck up. Get the heat and char on the outside.

    You can still have serious flavour without maximum blood.

    Everything else here is on point.

    PS – What cut is this?

  2. There’s as grey band around the exterior of the meat. That’s overcooked beef. That’s a big ring of well done steak surrounding a section of medium steak. Not my personal favorite.

    A lower temp will give a better sear and less of the grey well done area. Reverse sear also gives a more consistent cook

  4. How do you get the steak like this!!!!? I’ve never been able to cook it well
