my local chippy does two types. Chip Shop curry sauce and Chinese curry sauce. I’ve never seen Irish before but i would guess that is what my local calls chip shop.

What differentiates curry being ;Irish’ – I mean, it’s not a cuisine they’r internationally renowned for, is it? (Simple Englishman here… though I’ve travelled as far as Blackpool & Southend;)

Irish here. The “Irish Curry” does indeed have a slightly more sweeter taste but not too much. Think along the lines of a Katsu.
It’s also lovely and is a wonder on chips. If you’re ever ordering a curry chip in the ROI then you’ll likely get this. Wheras in NI, we tend to use the yellow chinese curry in our chippies BUT its not the same as the one you’d get in a Chinese takeaway as that’s usually more spicier.

In South Wales all the good chip shops have Chinese, Irish, fruity, and hot curry sauce. I like Irish or Chinese. Irish curry is sweeter. Fruity is with sultanas or similar fruit. Chinese and hot is what they sound like.
