  2. This reminds me of my Nonna. She used to make prosciutto the Calabrian way with hot pepperoncino. It tasted so much better than store-bought prosciutto. You could taste the love and effort she put into making this delicacy. I have tears in my eyes right now.

  9. For anyone that wants to try this, you can avoid the dryness by covering the exposed meat portion in lard, thats how Parma is made.

  16. 2 weeks for a prosciutto is some fast food shit. Some Italian guy sold me overpriced prosciutto at a market and I paid a lot for that because it was very tasty.
