Great British Menu star Jason Hughes has been appointed head chef at the Goat in Llandudno.
Hughes has starred in both series 13 and 18 of the hit BBC Two show, representing Wales both times.
Brought up in Caernarfon, Hughes left the RAF to join Gordon Ramsay at the Savoy Grill in London, where he later became head pastry chef after five years at the restaurant.
He has also held head chef roles at Blue Waters hotel in Antigua and at Anglesey’s Château Rhianfa.
At the Goat, he will be serving a new menu consisting of dishes such as ex-dairy beef tartare with kimchi and soy-cured egg yolk, baked hand-dived scallop, a seven spice roast duck breast, and rosemary infused chocolate crémeux with hazelnut ice-cream.
He said: “The Goat is all about celebrating what’s right here on our doorstep. We’ve got incredible seafood, meat and vegetables in north Wales, and I just want to give those ingredients the respect they deserve – cooking modern Welsh food with a few classic touches.”
Razvan Tauleanu, general manager at the Goat, added: “Jason brings a wealth of experience and I am sure our diners will relish his and his team’s culinary creations.”
