On my first year in Ireland I had the famous chicken wings at Elephant Castle, I absolutely loved them. But I wouldn’t drive 3 hours in a day just to go and eat them, so I tried to recreate them at home. I made them today after a long time and my Irish man says they taste the same. I thought someone may be interested in the recipe so here we go.

1,6 kg chicken wings, 1 tsp baking soda, 3 tsp of flour, for the spicy sauce: 8 tbsp Frank’s Buffalo sauce, 6 tbsp white vinegar, 2 tsp smoked paprika, 2 tsp cayenne pepper (adjust and add more if you like them extra hot), 2 garlic cloves reduced to a paste, 70gr melted butter; blue cheese sauce: 80gr cashel blue, 4 tbsp greek yogurt (add more yogurt if you like it less strong)

1. Important, dry well the wings. Then mix in a bowl with the flour and baking powder. Put in a oiled rack skin up. Cook in pre-heated fan oven 190C for 35 minutes (I open the oven every 10 minutes to let the steam out and make them crispier, don’t cook the chips in the same oven)

2. Mix the ingredients for the spicy sauce in a big bowl and then toss the hot chicken wings in there.

3. Use a food mixer to make a smooth blue cheese sauce.

  1. You should air dry the wings in the fridge over night with the baking powder and salt mix applied.
    There’s a recipe on serious eats that is very similar to the method you posted OP so maybe worth having a read of that too
