We clap with our hands as well, the knocking thing is mostly for university lectures and presentations.
I have only ever seen knocking on the table used as a greeting or farewell when people either enter or leave the pub.
That’s just Uni lectures, pretty much.
You know they also don’t clap in the British House of Commons? As is long standing parliamentary convention they cry “hear, hear” or do something else like waving with the order papers.
