Real honey solidifies, I’m guessing once opened exposed to air and temperature it’s a natural process.
Because you put it in the fridge or in a cold place.
If you warm it gently it liquifies again.
It crystalises. Stick it into hot water (doesn’t have to be boiling, probably better if it isn’t actually), and it will return to liquid form. If it happens once though, it will keep happening, so you may have to put it in hot water every now and again.
The natural sugars in honey tend to crystalise when there are temperature changes, sometimes it can be as simple a difference as leaving it on the counter instead of back in the cupboard. It’s not spoiled or unsafe to eat, just put the tub in a cup of hot water for a little bit and the crystals will break down

honey is low-water, which inhibits bacteria growth but allows easier crystallization. Ireland is cool in general, which helps form crystals as well. Natural honey with pollen provides nucleation sites to start crystals forming–and once you open it, if any dust or particles fall in that also provides sites to start crystals forming.
You can use it as-is, it’s edible and nothing’s wrong with it. If you wish to re-liquify it, plunk it in 40C water (not boiling) and melt the crystals. But once it crystalizes once, it’ll keep crystalizing (whatever is in there providing nucleation sites is still there), but it doesn’t hurt the honey.
