What are your interests? Your points of interest seem to go along nature, and hiking. I would suggest you at least drive along Hardangerfjorden if you are going on this trip. Also, I would suggest visiting Rosendal as there are a lot of hikes in that area, and Baroniet can also be interesting. For hikes, get the UT-app, made by Den Norske Turistforening, which is an organization that works to promote outdoor activities (among other things). I saw one suggest Skudeneshavn, due to vikings. Along those lines I’d suggest Viking Valley in Gudvangen also, since your route passes this.
When travelling back from the west, the road through Hemsedal is the most boring route. Go trough Eidsfjord, through Hardangervidda to Geilo. Fantastic road.
My tip for the west coast is to look at stuff not on the main road. Check out Fv7 , or places along the Sognefjord, for those nice places.
