I booked an ICE ticket for me and my gf. Since it’s my DB account, my details are included. But during the process, nowhere I was asked to enter her details. How am I supposed to tell the ticket controller that the other passenger is her?

That’s not required. You can even take someone else on that ticket if you want.
You point at her and say that she is the second passenger of the two adult tickets.
You point at her and say, for example, “Sie ist meine Mitfahrerin”.
