Hello guys,
A few months ago I was in Cyprus and brought dry anari cheese home with me. I can’t find any information if it’s made from pasteurised milk. I would expect yes, but I would like to confirm it as now my wife shouldn’t eat unpasteurised milk.
To be more specific, this is the cheese: https://en.charalambideschristis.com.cy/media/products/packs/NEW_Dry_Anari_A128E9093970D.png

It says pasteurized on the top ribbon with the ingredients

It doesn’t matter if the milk is initially pasteurized or not.
Anari (and halloumi) are cooked cheeses and are pasteurized during the cheese making process anyway.
Same with mozzarella ricotta etc
