
olá a todos, i’m trying to figure out a recipe for quejada de requeijão, but i’m having a hard time understanding the recipes as they’re all in português.
so one recipe:
calls for 2 requeijões- what cheese is that exactly and how much is two of it?
it also calls for “sopa de farinha com fermento”- what is sopa de farinha?

Colheres the sopa are normal spoons,it’s a mesurement, gemas are the yolk of the egg.
requeijão is cottage cheese
2 colheres de sopa de farinha com fermento – 2 tablespoons of self-rising flour (it’s flour with chemical yeast)

It’s a type of cottage / curd cheese. They usually come individually packed, so it’s asking for two of those.

“Sopa de farinha” would literally be Flour soup. That’s not what you want. The recipe calls for a “colher de sopa de farinha com fermento”, Colher de sopa is the measurement, means a Tablespoon, and “Farinha com fermento” is self-raising flour.

Gema is the yolk of the egg.
Requeijão is requeijão. It is not cottage cheese, not that it is even clear, defined worldwide what is cottage cheese. Cheese variants can vary a lot. I think closest thing might be ricotta – traditionally ewe´s milk or goat varieties are more appreciated, but use whatever you have.
They are usually sold in these little round containers or packaging, and one would usually weight around 200 grams (some kinds, usually own brands 170 grams, other more premium ones say 250 grams). I would use 400 grams of ricotta.

You likelu truncated after colher “colher de sopa” is a tablespoon (the most precise expression would have been colher das de sopa, a spoon of the kind used for soup to remove that risk of error you made.
Farinha com fermento – self rising flour (wheat).
The cheese is the most crucial thing, if it has a different texture or water weight than regular requeijão, the recipe might be fucked. Do not use cottage cheese, any cottage cheese I have ever seen is too watery and grainy.
I’ve seen that other people have replied about the rest but I really need to stress that Requeijão is NOT cottage cheese. I’ve had cottage cheese outside Portugal and it has nothing to do with Requeijão, both texture and flavour are very different!
