Well it’s not like she’s known for her mensa test score or her unparalleled empathy.

I have an idea about what might have happened, which is that she did not understand the advice from her lawyers.
She will have gone to them wanting to do something about Colleen Rooney’s famous post.
Her lawyers will have told her about possible legal action and what would be needed for her to prevail.
She may not have understood that the advice was conditional and taken it as approval for bringing the libel action.

I don’t normally follow celebrities but the Guardian had a lot of coverage of the trial. They generally made it sound like Coleen Rooney was quite smart and didn’t want to go to trial. Rebekah Vardy does sound like a moron though, I hadn’t really heard of her before the trial.
