It looks like a sinew or such like to me. Cutting a larger piece into smaller pieces would mean cutting through the same sinew and so it shows up in a few separate pieces? I could be wrong though.

Pure speculation- but could it be a defect on the blade that cuts the chicken leaving this mark.
Hits the machine blade rotates once before stopping hence its a simple number to accidently create if you find a more complicated number like 8 to produce my theory is gone.
