
Hi! I used to live in Riga, were I would eat lunch at TURĪBA daily. They often had chicken filet with cheese on top. I really really enjoyed the cheese, and I’ve tried to recreate it at home, with no luck. I can’t seem to figure out what type of cheese they use, or how exactly it’s made ( I’m guessing it might not just be cheese, maybe a mixture)
Two weeks ago I was visiting Riga again, and Lido also had the same type of dish, and the cheese topping tasted very similar. Attached Lido’s photo for reference (nevermind the pineapple)
Anyone who knows how to recreate the dish? 🤞🏻

I think it’s because it’s a mixture between shredded cheese and mayo..
Try mixing 2/3 cheese and 1/3 mayo.
You need soviet era type of named Russian/Holland chese 300g and mix it with 100g of mayo.
It may be hard to find such cheese but Switzerland uses more or less the same one under name Tilsiter from Switzerland so maybe you can find that one. https://en.wikipedia.org/wiki/Tilsit_cheese
And Soviets stole that mass produced cheese from German Prussia 😀
Tastes also warry in Latvia do to that type of cheese not having any establishet guidelines so every cheesemaker just makes their own recipe up
