It wouldn’t be of any use. Over here it’s goes from green, to brown, to mush in the ground usually within 2 days.
Our country is to small for something like this trees start to drop leaves from oktober and will lose most of it before November. This will be almost the same for the entire country.
One pixel on that map is roughly the size of the Netherlands. Usually Natuurmonumenten shares news about the fall foliage on their socials. You can also check out weather news websites like Buienradar who will share daily pictures about the change of the seasons.
Our country doesn’t make as big a deal out of it as Japan or the USA, so I’m not aware of special websites. I kinda want one now though.
The climate in the Netherlands is uniform enough that there won’t be any major difference between parts of the country with regards to leaves changing colour, at least not more than a few days

There is definitely differences noticeable in a small country like the Netherlands. When the leaves are gone here in Brabant I go to the South of Limburg to see the autumn colours. I think the leaves there drop like two weeks later. I haven’t really keept track of the rest of the country, but there’s definitely differences!
