  1. Yeah, the tastiest cheese is the one you like the most. Also, the charme is in Europe having hundreds, if not thousands of different cheeses and you can try them all. And that none of them come from a spray bottle.

  2. Pretty decent article. I was expecting a list of European cheeses American author has *heard* of. Instead, got a nice list of cheeses lesser-known outside their countries (and some known ones).

  3. I don’t think I’m an expert, but for some cheeses, the maturation time is extremely important for the taste. For example, Comté aged for 3 or 6 months does not have much taste. The one aged 18 or 24 months on the other hand, it’s another story.
