  1. FYI – that’s standard baking soda (sodium bicarbonate – as opposed to baking powder) – you should be able to get that almost anywhere.

    No need to get “natron” all the way from Denmark specifically 😀

  2. Interesting uses for baking soda / natron:

    * A small amount fluffs up your meatballs
    * When soaking dry chickpeas (or beans), or cooking them, some baking soda makes the skin come off easily — if you want a super-smooth hummus
    * emergency counter acidification if you really screwed up the balance of your meal and don’t want to throw it away
    * faster caramelization of onions for your French onion soup
