December 8th is the unofficial start of the Christmas preparations in Italy. In my home region we prepare tortellini in advance for the Christmas meals.

  1. Used to live with an Italian (from northern Italy). Spent several Christmases doing this (though obviously I was never good enough at it for them!). Pumpkin filling, I seem to recall.

    That, and seafood for Christmas dinner (though they did always source a turkey just for me!).

  2. Where’s the overly sized portions of super salty, greasy hunks of meat drowning in slimy cheese sauce?

    Ah wait, I’m thinking of Italian American food. Completely different.

  3. Buoni! What’s the real difference between tortellini and cappelletti? In Reggio It’s cappelletti, and in Parma Anolini. Anolini are made differently, with a lot of parmigiano. And Parma Nonna’s are very proud of their recipes. I personally prefer cappelletti, but don’t think I’ve ever tried tortellini.

  6. How the hell do you italians keep the dough hydrated enough? If I try to make tortelli my squares always dry out 🙁
