
Hei! I’d like to try and recreate a cookie that I used to eat in Finland as a child. It’s been a long time since I left, but I still remember it.

The ricotta is used here to make the dough fluffier. The real thing is a butter/flour mixture rolled with a pin into thin layers “croissant dough” style. The texture is leafier. But I am sure you’ll get a tasty cookie.
