Hei! I’d like to try and recreate a cookie that I used to eat in Finland as a child. It’s been a long time since I left, but I still remember it.

I found [this recipe](https://web.archive.org/web/20210128063649/https://www.bakefromscratch.com/finnish-pinwheel-cookies-joulutorttu/), does it look good? I’d love to hear your best recipes for making joulutorttu.

Kiitos <3

  1. The ricotta is used here to make the dough fluffier. The real thing is a butter/flour mixture rolled with a pin into thin layers “croissant dough” style. The texture is leafier. But I am sure you’ll get a tasty cookie.
