I support no potetos for the pinnekjøtt. But what is the brown sauce made of?
I am from Oslo, so I eat pinnekjøtt, but I am not born with the pinnekjøtt tradition.
But I would still go out on a limb here and say that is not pinnekjøtt.
And what is that thick sauce supposed to be?
(Red wine and no boiled potatos is weird too, but…)
I love everything made out of spite!
On a side note, pretty plate.

I usually make a thin roux using the melted fat from pinnekjøtt, and a bit of flour. It turns into a blonde translucent roux that adds some hint of mutton and saltiness. It’s really good as a condiment for the potatoes.
Other then then missing potatoes and the sauce it looks smashing. I also hope you don’t drink red wine out of that glass, and I hope you own a table. If not, perfect thing to ask for xmas!
